Glass Brasserie
Get excited, ladies and gentlemen, for I am about to reveal one of Sydney's best value and fun Sunday brunch options. The Glass Brasserie at the Hilton is hosting Sunday brunch with Luke (Luke being their head chef, Luke Mangan), bringing you 5 share courses and 2 hours of free-flowing Aperol spritz and rose, by tyhe sun-drenched windows looking directly out at the gorgeous facade of Queen Victoria Building. Can you even imagine a more perfect catch-up with friends?
We begin with salmon rillettes with pickled cucumber on plump little crumpets. Having been used to the bee-hive-like crumpets at the supermarket (not that those aren't delightful - they absolutely are), I am so impressed with these pancake-like crumpets. They are more satisfying than pancakes, for they have a gorgeous chew. The salmon rillettes come in a generous serving jar, and has the consistency of mousse. The cucumber pickle is a nice, tart, pick-me up that rounds out this dish.
Up next, we have zucchini flowers on a bed of beetroot hummus. It is paired with the pungent savoury flavours of gorgonzola, and dotted with corn and soft herbs. It is satisfyingly crunchy and complex.
The crab omelette means business. That little golden pillow is a fancy take of the okinomiyaki, a delightful Japanese savoury pancake, and it is filled to the brim with crab meat. It is topped with bonito, nori, Japanese pickles, yeriyaki glaze and Japanese mayonnaise (which is a touch sweeter than tranditional mayonnaise) and finally drizzled with a miso broth. You can just imagine how umami this gem is.
The three entrees above are two-people portions. We now move onto the single-person portion of the five-course degustation.
The spatchcock is cooked to perfection. Its meat delicate and tender, skin cripsy, and its flavours well-balanced with pancetta, sage, parmesan and carrot puree. A delicate little bird that delivers a great deal of satisfaction.
Finally, we finish with a generous portion of key lime pie. I am absolutely in love with the unapologetic zestiness of this dessert that is so refreshing it is almost like a palette cleanser. It is fluffy and creamy, but the visible lime zest sure packs a delightful punch.
